T55 All-Purpose Flour is suitable for any type of bread & sponges. It is made from the hard wheat variety and has low ash and moderate gluten content. French-style type 55 is known for its versatile baking application. It is milled from a mixture of hard and soft wheat and has protein content ranging from 11.5% to 12.9%. As per the French style flour classification, T55 All-Purpose flour has about 0.50% to 0.55% mineral content.

French-style All-Purpose Flour type T55 is ideal for making bread, puff pastries, and croissants. This flour helps many bakers across the globe to achieve a consistent baking application. This Flour gives a light open textured loaf with a crisp crust. It is medium in protein content, and when this protein is mixed with water it forms gluten. T55 flour is equivalent to Type 0 Italian flour, Euro 550 flour type, and American all-purpose flour. Our T55 flour is non-fortified, unbleached, and Non- bromated.

I have tried a variety of recipes with this flour and ALL came out fantastic! Bread, biscuits, naan, pies... all came out wonderful. I now feel like a master chef! I follow John Kirkwood's YT channel and all his recipes are easy to follow and you can't go wrong with a good recipe and the right ingredients.

Makes beautiful yum white bread loads with a soft white airy center and a strong chewy crust. Don’t listen to the internet Net flicks experts commenting on hydration and gluten strength and other BS. I make a loaf every week and it comes out perfect. 1.8 cups warm water, 3/4 tbsp sugar, 4 tsp dry yeast. Hydrate for 20 mins. Add 2 1/4 TBsp butter, 3/4 tbsp salt, 4.75 cups flour, Knead for 10 mins. Rise for 1 hour. Deflate and shape it and let it proof itself in a 1.5 Lb loaf pan for an hour. Bake for 30 mins at 160C. Brush top with butter (optional) and cool it covered with a tea towel for soft crust.

Josef Marc Farine de ble is the best flour for bread.
I have been making bread every 2 days and tried with " organic maida " or ordinary wheat from the store.
But they are nothing good. Smell is not so good.

Josef Marc Farine de ble makes really great fragrance and raise really well.
Totally different quality from any other flour.
I will stick with Josef Marc Farine de ble for bread.

If you don't believe me you can try buying small packet of this flour and buy cheap maida from the store and make 2 types of bread with exactly the same recipe.
Compare which one is better.
If you do that you will understand what I am saying.

I've been using this brand now for about a year for all my bread baking needs. The flour develops really good gluten while kneading. I've used it to bake sourdough, ciabattas, bagels and even pizza. It works perfectly. While it may seem slightly highly priced, think about how much you'd pay to buy gourmet breads - it is excellent on ROI.

Brioche is a very rich but amazingly light type of bread. Perfect for breakfast and lovely toasted, it’s also good in a bread and butter pudding.


TOTAL TIME: 40 Minutes 


INGREDIENTS

  • 1000 gms of Josef Marc T55 Bread flour
  • 220ml of Milk
  • 20gm of Salt
  • 60gm of Caster sugar
  • 40gm/12gm of Wet/Dry Yeast
  • 230ml of Egg
  • 170gm of Unsalted butter, cubed



BAKING METHOD

PLACE all the ingredients in a mixing bowl.

USE a spiral mixer

MIX on a slow speed for 4 minutes and the mix on a fast speed for 6 minutes. 

DOUGH temperature should be at 24°C to 26°C.

BULK fermentation for 20 minutes. 

SCALE the dough into 300gm in a mould. Intermediate proof not required. 

FINAL proof for 40 min under 75% humidity and temperature of 31ºC. 

BAKING temperature at 200ºC under the falling temperature of 180ºC for approx.. 20 minutes for 300gm pieces.

BAKING METHOD

PLACE all the ingredients in the mixing bowl.

USE a spiral mixer for mixing.

MIX on the slow speed for 4 minutes and on the fast speed for 8 minutes.

DOUGH temperature should be between 24°C to 26°C.

BULK fermentation the dough for 40 minutes.

SCALE the dough weight to 350gm to 400gm and flatten it in a tray that has edges.

INTERMEDIATE proof for 20 minutes.

BRUSH the dough with olive oil, rock salt, and herb mixture & press it gently in holes with fingers.

FINAL fermentation for 40 to 45 minutes at 32°C at 80% humidity.

BAKE at 230°C under a falling temperature of 210°C for 20 minutes approximately.

APPLY olive oil and her mixture after baking. Herb mixture suggestion: Basil, Oregano, Garlic, Paprika, Thyme, Organic or use an Italian seasoning mixture and blend it with oil.

BAKING METHOD
 

PLACE all the ingredients in the mixing bowl.

USE a spiral mixer for mixing.

MIX on the slow speed for 6 minutes and on the fast speed for 8 minutes.

DOUGH temperature should be between 26°C or 28°C.

PROOFING time is 15 to 20 minutes, After first proofing of 15 minutes.

KNEAD the fruits under the dough. Divide into pieces of 560gm, round them, and set them to proof for another 20 to 30 minutes. At half proof spread with egg. Cut the pieces of bread crosswise before putting them into the oven.

BAKE at 190°C under a falling temperature of 200°C for 20 to 35 minutes.
